Baked Blueberry Oatmeal

Ingredients

  • 2/3 cup chopped pecans
  • 2 cups old-fashioned oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 3/4 cups milk (2% or whole)
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1/4 cup butter, melted
  • 2 teaspoons vanilla extract
  • 12 ounces (1 pint) fresh or frozen blueberries, divided
  • 2 teaspoons coarse sugar (optional)

Directions

1. Preheat the oven to 350 degrees and grease an 8 x 8-inch baking dish with non-stick spray or butter.  Set aside.

2. Place baking sheet with pecans in the preheated oven for 4 minutes.  Remove from oven and use a spatula to stir/turn pecans.

3. Return to oven for another 3-4 minutes until slightly darkened in color with a toasty aroma.  Allow to cool before using.

4. In a large bowl, stir together the oats, toasted pecans, cinnamon, baking powder, and salt. 

5. In medium bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla.

6. Spread most of the blueberries on the bottom of the baking dish.

7. Top with the dry oat mixture.

8. Pour the wet mixture over it.

9. Lightly stir to distribute the liquid evenly. 

10. Scatter the remaining blueberries on top and sprinkle with coarse sugar if desired.

11. Bake for 40-45 minutes, until the top is golden and set. 

12. Enjoy warm, chilled, or at room temperature.
