ingredients:
- 18 oz refrigerated or shelf stable gnocchi
- 2 tablespoons olive oil
- 12 oz fully cooked Italian chicken sausage, cut into 1/2” pieces
- 12 ounces cherry or grape tomatoes
- 2 cloves garlic, minced
- 4 cups marinara sauce (32 oz)
- 1/4 cup heavy cream
- 1 teaspoon black pepper
- 1 teaspoon crushed red pepper flakes
- 2 cups baby spinach leaves, packed
- 8 oz. fresh mozzarella, cut into slices
- 1/4 cup parmesan cheese, shredded
- Fresh basil for garnish

How to cook Baked Gnocchi With Sausage
- Preheat oven to 375 degrees and spray an 11x7 inch baking dish with cooking spray.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken sausage and cook for 2 to 3 minutes.
- Add the tomatoes and cook another 4-5 minutes until chicken sausage is browned and tomatoes are soft.
- Transfer to a clean plate and set aside.
- In the same skillet, heat another tablespoon of olive oil over medium heat. Add the garlic and sauté for a minute until fragrant.
- Add half of the marinara, heavy cream, pepper and red pepper flakes to the skillet.
- Bring sauce to a low simmer.
- Add the spinach and cook until spinach starts to wilt. Remove from heat and set aside.
- Boil water and cook gnocchi 1-minute shy of the instructions on the package. Rinse with cold water and set aside.
- Pour the spinach marinara sauce into the bottom of your greased baking dish and evenly spread.
- Add the gnocchi as the next layer and evenly spread.
- Add the sausage and tomatoes, and evenly spread.
- Evenly place pieces of mozzarella over the top of the layered dish.
- Pour remaining marinara sauce over the top of the layered dish and spread evenly.
- Sprinkle parmesan cheese on top.
- Bake in preheated oven for around 15 minutes until the sauce is bubbling and the cheese starts to brown on top.
- Garnish with basil and serve warm.
NOTES:
You can also use shredded mozzarella or pre-packaged mozzarella slices, but fresh mozzarella is the best.
Try to use high quality marinara sauce with few ingredients, such as Rao’s. It will make a huge difference in taste!
Pork sausage or turkey sausage will work great with this recipe too. If not fully cooked, you will need to adjust the cooking time in the skillet.
