Baked Granola Bars With Prunes

1. Line a 9”x 13” baking pan with parchment paper. Preheat oven to 325 degrees.
2. In a food processor or blender, add 1/2 cup oats, 1/2 cup cashews, 1/2 cup almonds and 1/2 cup pecans.
3. Pulse until the mixture has a soft sawdust-like consistency.
4. In a large bowl, add the pulsed mixture, the remaining oats, cashews, almonds, pecans, pepitas, sunflower seeds and prunes. Stir together.
5. In a small saucepan, add the coconut oil, and honey.
6. Heat over medium and bring mixture to a simmer.
7. Remove from heat and pour over the oat/nut/prune mixture.
8. Add cinnamon and salt. Stir together until all pieces are coated.
9. Immediately scoop into the prepared baking dish.
10. With an extra piece of parchment paper, press down hard with fingertips until it is one solid even layer. You can also use a small flat dish to press.
11. Bake for 20 minutes.
12. Remove from oven and let cool completely (around 30-45 minutes).

Cut into bars and place on a wire rack with parchment below.
14. Heat the dark chocolate chips in a microwave safe bowl. Heat in the microwave on half-power. Start with 1 minute and stir then 15 second intervals stirring in between until chocolate is smooth.
15. Drizzle chocolate over the bars.
16. Let chocolate cool completely before serving and storing.
