Brookie Ice Cream Sandwich Bars
Ingredients
- 1 cup flour
- 1 teaspoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup sugar
- 1 egg
- 1 teaspoons vanilla
- 1/2 cup chocolate chips, plus 2 tablespoons
- 1/4 cup butter, slightly melted
- 1/8 cup vegetable oil
- 2/3 cups sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup flour
- 1/4 cup cocoa
- 1/4 teaspoon salt
- 1/4 cup chocolate chips
- 1 1/2 quarts vanilla ice cream1/2 cup chocolate chips

Cookie Layer
1. Preheat oven to 350 degrees. Line a 9x9 baking pan with parchment paper
2. In a medium bowl, whisk together flour, cornstarch, baking soda, and salt. Set aside.
3. Add butter to a large bowl and beat until creamy.
4. Add brown sugar and sugar beat until combined.
5. Add egg and vanilla and beat for another minute until well combined.
6. Add flour mixture and mix on low until all of the flour is incorporated scraping the sides when necessary.
7. Gently fold in the chocolate chips. Leaving 2 tablespoons for finishing touches.
8. Gently spread the dough evenly with a spoon or your hands.
9. Bake for 18-20 minutes until a toothpick comes out clean.
10. Remove from oven and let cool completely. Add extra chocolate chips if desired.
Place in the refrigerator to chill.
Brownie Layer
1. Line another 9 x 9 baking pan with another piece of parchment paper once cookies are done cooling. Oven should already be preheated to 350 degrees.
2. In a medium bowl, whisk together flour, cocoa and salt. Set aside.
3. In a large bowl add the butter, oil and sugar.
4. Whisk until combined.
5. Add egg and vanilla. Whisk until well combined.
6. Slowly add the flour mixture to the wet mixture. Mix until just combined. Do not overmix.
7. Stir in the mini-chocolate chips.
8. Pour the batter into the pan and spread evenly.
9. Bake for 18-20 minutes until toothpick comes out clean.
10. Let cool completely in pan. Then put in refrigerator for 30 minutes before layering.
Ice Cream Layer
1. Add ice cream to a large bowl and let sit for 5 minutes. Mix until ice cream is smooth and spreadable.
2. Fold in chocolate chips.
3. Spread ice cream in an even layer on top of the brownie in the pan.
4. Carefully remove parchment paper from the cookie layer and place the cookie layer on top of the ice cream layer top side up.
5. Press down gently making sure the layers are together. You can use another baking pan to press down if desired.
6. Cover the pan or pans with plastic wrap and place in freezer for at least 3 hours.
7. Remove from freezer and cut bars into squares using a serrated knife.
8. Wrap each sandwich in plastic wrap. Keep in freezer until ready to serve.
