Cast Iron Irish Soda Bread

Sure, you probably have your corned beef and cabbage all set to go but do you have your Irish Soda Bread on lock? This simple and humble bread is our favorite part of the St. Paddy’s day feast and we’re sharing our 6-ingredient, easy recipe that will make you wonder why you don’t make this bread all year round. Toasted and simply spread with butter or jam, it's a delicious and quick breakfast or snack on any day!

1. Gather ingredients. Preheat oven to 400 degrees. Make sure your cast iron skillet is properly seasoned, dry, and at room temperature.

2. In a medium bowl, add flour, baking soda, salt, and sugar. With a fork, stir to fully combine.

3. Add raisins and buttermilk to dry mixture.

4. Stir gently with the fork to fully combine all ingredients, ensuring all the dry ingredients are moistened. Dough will be very tacky.

5. Scrape the dough out onto a lightly floured work surface.

6. Lightly flour your hands as needed. Quickly and gently shape the dough into a disk, approx. 6” wide. No kneading necessary. It’s okay if the disk is not completely smooth. It just needs to be shaped enough so that you can pick it up without it being stuck to the work surface or to your hands.

7. Place the disk into the center of the cast iron skillet.

8. Carefully, with a sharp knife, quickly cut an “X" across the top of the disk, approx. 1/4” deep.

9. Bake in preheated oven for 25-30 minutes, until crust is a firm, golden brown and dough at the top center is just cooked through.

10. Allow bread to cool in the skillet on a wire rack for 5 minutes before removing to cool completely.
