Chocolate Chip Gingerbread Cookies With Toffee
What do you get when you combine a gingerbread cookie with a chocolate chip cookie and add a little toffee? You get these incredibly decadent holiday cookies! Rich chocolate flavor mixed gingerbread spices and crunchy toffee!
Directions
1. In a medium bowl, whisk together flour, cinnamon, ginger, nutmeg, cloves, cocoa, baking soda and salt. Set aside.
2. In a large bowl or in the bowl of a stand mixer, beat the butter until smooth and creamy.
3. Add the sugar, brown sugar, molasses and boiling water. Beat together until combined.
4. Add the egg and mix until incorporated.
5. Add the flour mixture to the wet mixture. Mix until just combined scraping down the edges when necessary.
6. Mix in the chocolate chips and toffee bits.
7. Cover and place in the refrigerator for at least 2 hours.
8. Preheat oven to 325 degrees and line 2 baking sheets with parchment paper or silicone mats.
9. Scoop the dough into tablespoon sized balls and roll them in sugar.
10. Place dough balls on the baking sheets around 2 inches apart.
11. Bake for 10-12 minutes.
12. Add extra chocolate chips and toffee for appearance if desired. Transfer to a wire rack to cool completely.
