Directions

1. In a medium bowl, whisk together flour, baking soda, cream of tartar and salt. Set aside.

2. In a large bowl or the bowl of a stand mixer, add the butter and the sugar. Mix until incorporated.

3. Beat in the egg. Mix until well combined.

4. Add the lime Jell-O and mix until incorporated.


5. Slowly add the flour mixture and mix until just combined.

6. Fold in the coconut flakes.

7. Cover and let chill in refrigerator for 30 minutes.

8. Preheat oven to 350 degrees and line a baking sheet with parchment paper. Add rolling sugar to a small bowl.

9. Using a cookie scoop or spoon, scoop 1 ½ tablespoons of dough and roll into balls. Roll the cookie dough balls in the sugar and place on the prepared baking sheet.

10. Bake for 10-12 minutes until slightly browned on the edges.

 

11. Remove from oven and sprinkle more coconut flakes on top if desired.
