Crispy Pesto Gnocchi With Chicken and Bacon
Crispy gnocchi, chicken and bacon combined with zesty pesto! This easy to make dinner proves that delicious, fancy looking meals...do not have to be hard to make! Taking a few shortcuts, this meal comes together in less than 30 minutes.
Directions
1. Season chicken pieces with salt, pepper and basil.
2. Heat 2 tablespoons of olive oil over medium heat in a large non-stick skillet or Dutch oven.
3. Cook chicken for 2-3 minutes then add the bacon pieces.
4. Cook for another 3-4 minutes until chicken is thoroughly cooked (no longer pink in the middle) and the bacon is crisp.
5. Transfer to a plate and set aside.
6. Add butter to skillet and stir until completely melted.
7. Add the garlic and sauté about 1 minute until garlic is fragrant.
8. Add the gnocchi in a single layer in the skillet.
9. Sauté the gnocchi for 6-7 minutes until brown and crispy on the outside. Flipping occasionally to prevent burning and sticking.
10. Reduce heat to medium-low and add the chicken and bacon back to the skillet.
11. Stir in the pesto and cook for 1-2 minutes until warmed.
12. Remove from heat. Add fresh basil and parmesan if desired. Serve immediately.

Ingredients:

- 1 teaspoon salt

- 4 slices pre-cooked bacon, chopped into pieces
- 2 tablespoons butter
- 2 cloves garlic, minced
- 12 oz package shelf-stable gnocchi
- 1/2 cup pesto (homemade or store bought)
- 3-4 basil leaves, torn
Instructions:
