Crispy gnocchi, chicken and bacon combined with zesty pesto! This easy to make dinner proves that delicious, fancy looking meals...do not have to be hard to make! Taking a few shortcuts, this meal comes together in less than 30 minutes.
Ingredients:
- 2 tablespoons olive oil
- 2 chicken breasts, cut into 1” cubes (about 1 lb)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried basil
- 4 slices pre-cooked bacon, chopped into pieces
- 2 tablespoons butter
- 2 cloves garlic, minced
- 12 oz package shelf-stable gnocchi
- 1/2 cup pesto (homemade or store bought)
- 3-4 basil leaves, torn
Instructions:
- Season chicken pieces with salt, pepper and basil.
- Heat 2 tablespoons of olive oil over medium heat in a large non-stick skillet or Dutch oven.
- Cook chicken for 2-3 minutes then add the bacon pieces.
- Cook for another 3-4 minutes until chicken is thoroughly cooked (no longer pink in the middle) and the bacon is crisp.
- Transfer to a plate and set aside.
- Add butter to skillet and stir until completely melted.
- Add the garlic and sauté about 1 minute until garlic is fragrant.
- Add the gnocchi in a single layer in the skillet.
- Sauté the gnocchi for 6-7 minutes until brown and crispy on the outside. Flipping occasionally to prevent burning and sticking.
- Reduce heat to medium-low and add the chicken and bacon back to the skillet.
- Stir in the pesto and cook for 1-2 minutes until warmed.
- Remove from heat. Add fresh basil and parmesan if desired. Serve immediately.
Notes:
If using uncooked bacon, you can cook the bacon in the same pan and use some bacon grease to cook the chicken. I used pre-cooked bacon to make this meal as easy.
Store bought pesto is fine, but if you would like to make your own, here are the ingredients and instructions.
Pesto
1 cup fresh basil leaves, lightly packed
1/4 cup Parmesan, grated
1/4 cup pine nuts, toasted
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil
1 tablespoon lemon juice
Make the Pesto:
In a medium frying pan, toast the pine nuts over medium-low heat for 3 minutes stirring constantly to avoid burning.
When they turn golden brown and become fragrant, remove them from the heat to stop cooking.
In a food processor or blender, add the basil, Parmesan, garlic, salt and pepper. Pulse together until chopped.
Add the olive oil and pulse until mixture is smooth scraping down the sides when necessary. Cover and set aside in refrigerator
