It only takes a few simple ingredients to make this easy and delicious tuna salad! Tangy, creamy and crisp...you can make a sandwich, serve with crackers or just eat it straight out of the bowl!
Ingredients:
- 2 cans (10 oz) white tuna packed in water, drained
- 1/2 cup cucumber chopped
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup frozen corn, thawed
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons capers, rinsed
- 2 tablespoons mayonnaise
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- Juice of 1 lemon
Instructions:
- Add all of the ingredients to large bowl.
- Mix together well until all pieces are coated.
Notes:
Serve and enjoy. Store in refrigerator for up to 3 days in an airtight container.
