Edamame Caviar
Fresh and healthy! Great for your Summer Barbecues!
Directions
1. In a small bowl whisk together the olive oil, apple cider vinegar, lime juice, maple syrup, water, salt and pepper to make dressing.
2. In a large bowl combine edamame, corn, green bell pepper, red bell pepper, red onion and green onion and combine.
3. Pour dressing on top of veggies and mix well.
4. Add cilantro and lightly mix.
5. Cover and put in fridge for a few hours or overnight.
6. Serve with tortilla chips or as a side.

- 2 cups frozen corn (thawed)
- 2 cups edamame (shelled)
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup green onions chopped (2 or 3 onions)
- 1/4 cup olive oil
- 1/2 cup apple cider vinegar
- 3 tbsp maple syrup
- ½ cup lime juice (3-4 limes)
- 1 teaspoon water
- 2 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup cilantro finely chopped

How to cook Edamame Caviar
