Fresh and healthy! Great for your Summer Barbecues!
ingredients:
- 2 cups frozen corn (thawed)
- 2 cups edamame (shelled)
- 1/2 cup green bell pepper, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup green onions chopped (2 or 3 onions)
- 1/4 cup olive oil
- 1/2 cup apple cider vinegar
- 3 tbsp maple syrup
- ½ cup lime juice (3-4 limes)
- 1 teaspoon water
- 2 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup cilantro finely chopped
instructions:
How to cook Edamame Caviar
- In a small bowl whisk together the olive oil, apple cider vinegar, lime juice, maple syrup, water, salt and pepper to make dressing.
- In a large bowl combine edamame, corn, green bell pepper, red bell pepper, red onion and green onion and combine.
- Pour dressing on top of veggies and mix well.
- Add cilantro and lightly mix.
- Cover and put in refrigerator a few hours or overnight.
- Serve with tortilla chips or as a side.
