Ingredients

Chicken Meatballs
  • 1 pound ground chicken
  • 2 large eggs
  • 1/2 cup green onion, diced (plus extra for garnish)
  • 1 tablespoon minced garlic
  • 1 cup Panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
Firecracker Sauce
  • 3/4 cup Frank’s red-hot sauce
  • 3/4 cup light brown sugar
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes

Directions

1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.

2. In a medium saucepan, whisk together the hot sauce, brown sugar, vinegar, salt and red pepper flakes.

3. Bring mixture to a boil over medium-high heat.

4. Reduce heat and simmer for 6-8 minutes until mixture starts to thicken.

5. Remove from heat and let cool. Mixture will thicken more while cooling.

6. In a large bowl, add the chicken, eggs, green onions, panko, garlic, paprika, onion powder, salt, and pepper.

7. Stir together with a fork until just mixed.

8. Make small balls of the chicken mixture using a spoon or a small scoop.

9. Place on the baking sheet. You should have around 24 small meatballs.

10. Brush with half of the firecracker sauce. (Make sure to wash the brush before using after baking)

11. Bake for 20-25 minutes. If using a thermometer, the internal temperature should be around 170 degrees.

12. Remove from oven and brush with remaining firecracker sauce.

13. Sprinkle with extra green onions and serve immediately.
