No flour and crazy easy to make! Crunchy on the outside and chewy on the inside...just like the edge of a brownie! Dusted with sea salt, these cookies are hard to resist!
Ingredients:
- 3 cups powdered sugar
- 3/4 cup cocoa powder
- 2 teaspoons cornstarch
- 1/2 teaspoon salt
- 1 egg
- 2 egg whites
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- Flaky sea salt for topping
Instructions:
- Preheat oven to 325 degrees and line two baking sheets with parchment paper.
- In a large bowl, add the powdered sugar, cornstarch, salt and cocoa. Whisk together until combined.
- Add the egg whites, egg and the vanilla. With an electric mixer or with a whisk, mix until all the dry ingredients have been incorporated.
- Fold in the chocolate chips.
- Using a spoon or transferring batter to a pastry bag, drop tablespoon sized dough on the baking sheets spaced evenly apart. Batter will be runny.
- Bake for 12-14 minutes until cookies are just set and start to crack on top.
- Remove from oven and let cool on baking sheet for 5 minutes. Carefully remove cookies with a spatula.
- Sprinkle with sea salt.
Notes:
These cookies should be crunchy on the outside and chewy on the inside. Just like the edges of a brownie.
