Goulash
Goulash is one of our favorite comfort foods! A chunky, flavorful meal combining tender elbow pasta, lots of veggies and a hearty tomato based sauce with Italian spices.

Notes:
Leave out the wine and add another cup broth if desired.
You can also use ground beef with this recipe. After the beef browns, strain a little of the grease from the pot before continuing.

1. Cook elbow pasta according to package directions to make al dente pasta. Do not overcook.
2. Drain pasta and stir in one teaspoon olive oil to avoid pasta sticking together. Cover and set aside.
3. Heat 1 tablespoon olive oil in Dutch oven or large soup pot over medium heat.
4. Add the turkey and cook for 5-6 minutes until browned.
5. Remove cooked turkey from pot and set aside on a plate.
6. Add remaining 1 tablespoon olive oil to the pot.
7. Add the onion, carrots and red bell pepper.
8. Sauté for 5-6 minutes until veggies are tender.
9. Add garlic and cook for another minute until fragrant.
10. Add the broth, wine, tomatoes, Worcestershire, Italian seasoning and paprika the pot.
11. Stir together and let come to a boil.
12. Stir in the ground turkey and elbow pasta.
13. Cook for another 5-6 minutes over low heat.
14. Remove from heat and stir in the tomato sauce and ketchup.
15. Season to taste with salt and pepper and top with fresh parsley. Serve warm.
