Ham, Apple, and Gouda Quesadillas

Ham, Apple, and Gouda Quesadillas
Ingredients
- 4 (8-inch) whole wheat tortillas
- 4 oz. cream cheese, softened
- 2 tablespoons Dijon mustard
- 1/4-pound ham, thinly sliced
- 4 slices gouda cheese
- 1 apple, cored and thinly sliced
- 1 tablespoon butter
- 2 green onions, chopped (for garnish)
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons mayonnaise
- 1 teaspoon paprika

1. Preheat oven to 375 degrees and line a large baking sheet with parchment paper.
2. Make the honey mustard. In a small bowl, whisk together the honey, Dijon mustard, mayo, and paprika. Set aside.
3. In a small bowl, mix the cream cheese and the Dijon mustard together. Set aside.
4. Spread butter on the top of two tortillas and place them butter side down on the parchment paper.
5. Butter the top of the remaining two tortillas and set them aside.
6. Spread cream cheese mixture evenly on the face down tortillas.
7. Layer with equal parts cheese, ham, and apple.
8. Lay the two remaining tortillas on top of the layered quesadillas butter side up.
9. Bake for 10-12 minutes until the cheese is melted and tortillas are browned.
10. Remove from oven and cut into quarters.
11. Sprinkle with green onions and serve with honey mustard dipping sauce.
