A family favorite! This stew is so easy to make, feeds your whole family and is healthy! Not to mention delicious!
ingredients:
- 1/4 cup olive oil
- 3 teaspoons garlic, minced
- 1 onion, chopped
- 6 carrots, cut
- 1 lb ground turkey
- 1/3 cup soy sauce
- 1/8 cup Franks Red Hot (optional)
- 1/4 cup lemon juice
- 1 teaspoon cayenne
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup boiling water
- 3 cups potatoes
- 4 green onions, chopped
instructions:
How to cook Healthy Turkey Stew
- Add olive oil, garlic, onion and carrots into a Dutch oven or a heavy bottom stainless steel pot.
- Sauté for 5 minutes over medium-high heat.
- Lower heat to medium and add ground turkey. Cook for 5 more minutes, breaking meat into pieces with a spatula.
- Add soy sauce, Franks Red Hot, lemon juice, cayenne, salt and pepper.
- Add boiling water and potatoes. Stir gently to combine.
- Bring to a boil, cover and cook on low-medium heat for 25 minutes.
- Then add green onion. Stir gently.
