Reheat white chocolate to retain smooth melt. Add a little more oil if white chocolate becomes too thick.
Use 12oz of white chocolate if only covering half the cookies. 24 oz is for covering the whole cookie in white chocolate.

1. In a medium bowl, whisk together the flour, cocoa, baking powder and salt. Set aside.
2. In a large bowl or the bowl of a stand mixer, beat butter until smooth and creamy.
3. Slowly add sugar and mix together until incorporated.
4. Add the eggs and the vanilla and mix thoroughly until all clumps are smooth.
5. Add half of the flour mixture and mix together. Then add the other half and mix together until all the flour is incorporated and the dough is thick and sticky.
6. Cover, and chill dough for 1-2 hours in the refrigerator.
7. Preheat oven to 375 degrees and line 2 baking sheets with parchment paper.
8. Roll out dough on floured silicone mat or floured surface 1/4 inch thick.
9. Cut into circles with a 2.5”-3” circle cookie cutter and place on baking sheets lined with parchment paper. You should get around 32 cookies.
10. Bake for 7-8 minutes. Cool completely before decorating.
11. In a medium bowl, heat white chocolate and canola oil on half power in the microwave. Start with 1 minute and stir.
12. Then heat on half power for 15 second intervals stirring in between until chocolate is smooth.
13. Dip or spread the cookies in the white chocolate. Use a fork or dipping tool to assist.
14. Sprinkle crushed peppermint on top.
15. Let cool and store in refrigerator until ready to serve.
