ingredients:
- 2 pounds multi-colored or orange carrots
- 3 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 green onions, chopped
- 2 tablespoons sliced almonds

How to cook Honey Dijon Roasted Carrots
- Preheat oven to 400 degrees and line a baking sheet with parchment paper or foil.
- Peel the carrots and cut them into 6-inch thin pieces so that carrots are of uniform.
- Place them in a large bowl and set aside.
- In a medium bowl, whisk together olive oil, honey, Dijon mustard, minced garlic and lemon juice.
- Pour 2/3 of the mixture over carrots and stir coating evenly. Reserve the other 1/3 for later.
- Arrange the carrots in a single layer on the baking sheet and sprinkle salt and pepper on top.
- Roast the carrots in the oven for 40-50 minutes. Turn them every 10 minutes until they begin to crisp black along the tips.
- Remove from oven and transfer to a serving dish.
- Drizzle remaining honey-mustard mixture over the top and sprinkle with green onions and almonds.
NOTES:
Use multi-colored or orange carrots.
I used whole grain dijon mustard this recipe.
