An easy one pan Italian dish that is full of flavor! Large pieces of spicy sausage, veggies and potatoes drenched in a savory broth!
Ingredients:
- 1-pound baby red or gold potatoes
- 1 tablespoon olive oil
- 16 oz spicy turkey Italian sausages
- 2 tablespoons butter
- 1 yellow onion, cut into 2” pieces
- 1 red bell peppers, cut into 2” pieces
- 1 green bell peppers, cut into 2” pieces
- 2 small tomatoes, diced
- 4 cloves garlic, minced
- 2 tablespoons Italian seasoning
- 1 teaspoon fennel seeds (optional)
- 2 tablespoons whole grain mustard
- 1/2 cup white wine or chicken broth
Italian Seasoning
- 1 teaspoon marjoram
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 1/2 teaspoon thyme
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
- Place potatoes in a single layer on a large microwave safe plate. Microwave on high for 2 minutes.
- Flip and rotate the potatoes and cook another 2 minutes until potatoes are slightly tender.
- Let potatoes cool and cut them in half.
- In a large skillet, heat olive oil over medium heat.
- Add whole sausages to the skillet and brown for 5-6 minutes on each side until mostly cooked. Not cooking completely.
- Remove from skillet and let cool. Cut sausage medium pieces or into rounds.
- In the same skillet, melt the butter over medium heat.
- Add the onion, peppers, to the pan.
- Sauté for 2-3 minutes until veggies are soft.
- Add potatoes and tomatoes and sauté for another 2-3 minutes.
- Add the garlic and sauté for another minute until fragrant.
- Stir in the Italian seasoning, fennel seeds and mustard.
- Add the sausage back to the skillet and cook for 2 minutes. Stirring occasionally.
- Add the white wine or broth. Bring to a boil and then reduce heat to low and simmer for 2-3 minutes until half of the liquid has cooked off.
- Remove from heat and serve warm.
Notes:
Use sweet or spicy sausage. You can substitute turkey, chicken or veggie sausage to this dish.
