Lemon Garlic Chicken Bites

1. Season all sides of the chicken pieces salt and pepper. (1 tsp salt, 1 tsp pepper)
2. Heat olive oil in a large skillet over medium-high heat until oil starts to lightly smoke.
3. Add chicken pieces to skillet in a single layer spaced evenly apart.
4. Cook for 3-4 minutes until browned on the bottom.
5. Flip the chicken pieces and cook for another 2-3 minutes and the chicken reaches and internal temperature of at least 165 degrees.
6. Transfer to a plate.
7. Add butter to the pan and stir until melted.
8. Add garlic and the rest of the salt and pepper. Sauté 1-2 minutes until fragrant.
9. Pour in the wine and deglaze the pan scraping up all the browned bits. Cook for a couple minutes letting wine reduce by half.
10. Stir in the lemon juice and parsley.
11. Add chicken back to the pan and cook for another minute spooning the sauce over all the chicken pieces.
12. Remove from heat and serve warm with your favorite side.
