Lemon Oat Bars
A mix between a lemon bar and an oatmeal cookie! This cool, tangy treat mixes up quick and is sure to cure your Summer sweet tooth.

Lemon Oat Bars
Ingredients
- 1 1/2 cups flour
- 1 cup old-fashioned rolled oats
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup butter, melted
- 1 teaspoon vanilla
- 1 can sweetened condensed milk (14 oz)
- 1/2 cup lemon juice
- 2 tablespoons finely grated lemon zest
- 3 large egg yolks

1. Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper and set aside.
2. In a large bowl stir together the flour, oats, sugar, brown sugar, cinnamon, nutmeg and salt.
3. Add the melted butter and vanilla.
4. Mix together with a fork or a pastry cutter into a crumble-like mixture.

Set aside 1 1/2 cups of the crumble mixture for topping.
6. Press remaining crumble into the bottom of your baking dish.
7. Bake for 10 minutes. Remove from oven and let cool.
8. In medium bowl, add the sweetened condensed milk, lemon juice, zest and egg yolks. Whisk until combined.
9. Pour lemon filling over cooled crumble base.
10. Sprinkle with remaining crumble.
11. Bake for another 30-35 minutes until crumb topping is lightly golden.
12. Let bars cool in pan completely before cutting. For best results cover and put in the freezer for 30 minutes before cutting.
