Lemon Poppyseed Muffins

1. Preheat oven to 375 degrees and grease a 12-cup muffin tin with baking spray.
2. In a large bowl, whisk together the flour, sugar, poppy seeds, cornstarch, baking powder, baking soda, and salt. Set aside.
3. In a medium bowl add the yogurt, eggs, lemon juice and lemon zest. Whisk together.
4. Add the yogurt mixture to the flour mixture and slowly stir together with a wooden spoon or spatula.
5. Once mixture is just combined, gently fold in the melted butter. Do not overmix.
6. Divide the batter evenly between the muffin cups about 1/4 cup each.
7. Bake for 20-25 minutes until muffins are a golden brown. While muffins are baking, make the glaze.
8. Stir together the lemon juice and sugar in a small saucepan.
9. Cook over medium heat for a few minutes until the mixture thickens. Remove from heat.
10. While muffins are still warm, brush lemon glaze over the tops and sprinkle with coarse sugar if desired.
11. Let cool completely before serving.
