ingredients:
- ½ cup all-purpose flour
- 1 cup whole wheat flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons maple syrup
- 2 teaspoons lemon zest
- 2 large eggs
- 2 tablespoons coconut oil (liquid)
- 1 cup buttermilk
- 2 tablespoon fresh lemon juice
- ½ teaspoon vanilla extract
- 1 tablespoon poppy seeds

How to cook Lemon Poppyseed Waffles
- Preheat waffle iron.
- In a large bowl, whisk together the flours, baking powder, baking soda, and salt.
- In a medium bowl, whisk together eggs and buttermilk.
- Add coconut oil, maple syrup, lemon juice and lemon zest. Whisk together.
- Add the wet ingredients to the dry and stir until just combined. Gently stir in vanilla and the poppy seeds.
- Measure a ½ cup of batter and pour onto the hot waffle iron.
- Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. About 3-4 minutes depending on the waffle maker.
- Top with powdered sugar and syrup if desired.
