Ingredients
- 12 oz short-cut pasta (Fusilli, Farfalle, Penne, etc.)
- 2 tablespoons olive oil, divided
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium yellow bell pepper, sliced into strips, about 2-inches long
- 1 tablespoon minced garlic
- 2 tablespoons Cajun seasoning (I used Tony’s)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 (14.5 oz) can fire roasted diced tomatoes
- 1 1/2 cups chicken broth
- 1 cup milk
- 1 rotisserie chicken, shredded (around 3 ½ cups)
- 2 ounces cream cheese
- 1/2 cup parmesan cheese, shredded or grated
- 2 tablespoons fresh basil, chopped
