Maple Oat Lace Cookies
Crispy, delicate and sweet! This easy treat is half cookie, half candy with a rich maple flavor! Pairs perfectly with a cup of coffee or tea!

1. Preheat oven to 350 degrees and line baking sheets with parchment paper.
2. In a large bowl, add the flour, oats, baking soda and salt.
3. In a medium saucepan, melt the butter over medium heat.
4. Add the brown sugar, sugar and maple syrup while stirring.
5. Bring mixture to a boil.
6. Remove from heat and stir in the vanilla.
7. Pour the butter/sugar mixture into the dry ingredients and stir together.
8. Let dough cool for 5 minutes.
9. Drop single teaspoons of dough onto prepared baking sheets a couple inches apart to allow room for spreading. They will spread quite a bit!
10. Bake for 8-9 minutes in preheated oven. Rotate baking sheet halfway through.
11. Remove from oven when cookies are finished spreading and are a golden-brown color. Do not overbake!
12. Let cool completely on baking sheet.
13. When cooled the cookies will be crispy. Store in an airtight container for up to a week.
