1. In a medium bowl combine flour, baking powder and salt. Set aside.
2. In a large bowl or the bowl of a stand mixer, beat butter until smooth and creamy.
3. Slowly add sugar and mix until incorporated.
4. Add the eggs, maple extract and vanilla. Mix thoroughly until all clumps are smooth.
5. Add the flour mixture and mix until all the flour is incorporated, and the dough is thick and sticky.
6. Cover, and chill dough for 3 hours in the refrigerator or 1 hour in the freezer.
7. Preheat oven to 400 degrees and line 2 baking sheets with parchment paper or silicone baking mats.
8. Roll out dough on floured silicone mat or floured surface until 1/4 inch thick.
9. Cut into leaf shapes with maple leaf cookie cutter and place on baking sheets lined with parchment paper.
10. Bake for 6-8 minutes until bottoms are golden brown.
11. Remove from oven and let cool completely before decorating. Make maple glaze.
12. In a medium bowl, add the powdered sugar, maple syrup, maple extract and food coloring.
13. Whisk until combined. Glaze will be thick. If it’s too thick you can add a little bit of corn syrup until desired consistency is reached.
14. Using a piping bag or icing bottle, decorate the maple sugar cookies using the flood method.
15. Let dry for a few hours or overnight before storing in an airtight container.
