These are my favorite energy bars! Easy, healthy and chock full of flavor using only natural ingredients and no added sugar! An energy bar you can feel good about eating!

1. Line an 8 x 8 baking pan with parchment paper. Set aside.
2. Add almonds, cashews, and egg white powder to your food processor.
3. Pulse 5-6 times until the nuts are crushed into small pieces.
4. Add the dates and blueberries.
5. Pulse until combined with the nut mixture and food processor spins smoothly. The mixture will be dry and sticky.
6. Add half of the water and pulse until combined. Mixture should start to hold together more.
7. Add remaining water a little at a time until mixture starts to clump and stick to the side of the food processor bowl.
8. Scoop the mixture into the baking pan.
9. With an extra piece of parchment paper, press down hard with fingertips until it is one solid even layer. You can also use a small flat dish to press.
10. Cover and place in refrigerator for 1-2 hours.
11. Cut into bars with a sharp knife.
12. Wrap in wax paper or parchment. Store in airtight container until ready to enjoy.
