ingredients:
- 2 teaspoons olive oil
- 1 lb. ground turkey
- 1/2 cup green onion, diced
- 2 garlic cloves, minced
- 2 tablespoons southwest seasoning
- 1 can fire roasted tomatoes, diced
- 1 can green chilis
- 2 1/2 cups water
- 2 1/2 cups medium shells
- 1/2 cup shredded cheese, Mexican
- 1/4 cup fresh cilantro, chopped
Southwest Seasoning
- 1 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 teaspoon salt

How to cook One-Pot Southwest Turkey Pasta
- In a Dutch oven or large deep skillet, heat the olive oil over medium-high heat.
- Add the ground turkey. Break up the turkey with a wooden spoon and brown until mostly cooked.
- Lower heat to medium and add the green onion, garlic and southwest seasoning. Sauté for 2-3 minutes.
- Add the tomatoes, chilis, water and pasta. Bring mixture to a boil.
- Simmer for 10-12 minutes until pasta is cooked and water has mostly evaporated.
- Remove from heat. Top with cheese and cilantro. Serve immediately.
NOTES:
Substitute ground beef or vegetarian crumble for the ground turkey.
A taco or fajita seasoning packet will work as a substitute for the Southwest seasoning.
