One-Pot Southwest Turkey Pasta

Spice up your weekday with this easy one-pot dinner! Skip the taco shells and serve this pasta in a bowl topped with all of your favorite Southwest toppings!

1. In a Dutch oven or a large deep skillet, heat the olive oil over medium-high heat.

2. Add the ground turkey. Break up the turkey with a wooden spoon and brown until mostly cooked.

3. Lower heat to medium and add the green onion, garlic and southwest seasoning. Sauté for 2-3 minutes.

4. Add the tomatoes, chilis, water and pasta. Bring mixture to a boil.

5. Simmer for 10-12 minutes until pasta is cooked and water has mostly evaporated.

6. Remove from heat. Top with cheese and cilantro. Serve immediately.

  • 2 teaspoons olive oil
  • 1 lb. ground turkey
  • 1/2 cup green onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons southwest seasoning
  • 1 can fire roasted tomatoes, diced
  • 1 can green chilis
  • 2 1/2 cups water
  • 2 1/2 cups medium shells
  • 1/2 cup shredded cheese, Mexican
  • 1/4 cup fresh cilantro, chopped
Southwest Seasoning
  • 1 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
