Ingredients

  • 14 oz Polish sausage, cut into ¼”rounds
  • 1 tablespoon olive oil
  • 1 yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 ½ cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne
  • 3 cups brown or white rice, cooked
  • 2 cups frozen corn
  • 2 tablespoons cilantro, minced

Directions

1. In a large skillet, heat olive oil over medium-high heat.

2. Add the Polish sausage rounds and cook for 5 to 6 minutes until lightly browned. 

3. Transfer to a clean plate and set aside.

4. Lower heat to medium and add the onion, red bell pepper, and green bell pepper. 

5. Sauté vegetables in remaining oil for 5-6 minutes until veggies are soft.

6. Add the garlic and sauté another 1-2 minutes until fragrant.

7. Stir in the broth, salt, pepper, onion powder, and cayenne.

8. Bring to a boil and cook for 3-4 minutes until most of the liquid is gone.

9. Add the rice, corn, and cooked sausage to the skillet. 

10. Cook for another 3-4 minutes stirring occasionally.

 

11. Remove from heat and sprinkle cilantro on top.  Serve warm.
