Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup canned pumpkin puree
  • 2 cups old-fashioned rolled oats
  • 3/4 cup dark chocolate chunks

Directions

1. Preheat the oven to 350 degrees. Grease a 9x13-inch baking dish or line it with parchment paper.

2. In a medium bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt. Set aside.

3. In a large bowl or stand mixer with a paddle attachment, beat the softened butter until creamy.

4. Add the brown sugar, granulated sugar, and pumpkin puree then mix until well combined.

5. Beat in the egg and vanilla extract. Mix on medium-high speed for 1-2 minutes, until fully combined (the mixture may appear slightly curdled; this is normal).

6. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

7. Gently fold in the rolled oats and 1/2 cup of the chocolate chunks.

8. Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining ¼ cup of chocolate chunks evenly over the top.

9. Bake for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

10. Let the bars cool completely in the pan. For a firmer texture, refrigerate for an hour before cutting. Slice into squares and store in an airtight container.
