Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 medium ripe bananas, mashed
  • 1 3/4 cup pumpkin puree (equal to one 15 oz. can pumpkin puree)
  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

Notes

If using an 8 x 4 bread loaf pan, don't fill completely to the top. There will be extra batter. Also, reduce baking time by 5 minutes.

Directions

1. Preheat oven to 350 degrees. Line a 9x5 loaf pan with parchment paper and spray with baking spray.

2. In a medium-sized bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.

3. In a large bowl, whisk together pumpkin puree, mashed bananas, and sugars.

4. Add eggs, oil, and vanilla. Mix until fully combined.

5. Add dry ingredients to pumpkin mixture.

6. Stir until just combined. Do not overmix.

7. Fold in the chopped nuts.

8. Add batter to prepared pan.

9. Bake approximately 55-65 minutes until a toothpick inserted in center of loaf comes out clean.

10. Let cool in pan for 10 minutes.  Then let cool completely on a wire rack before cutting into pieces.
