A delicious, savory twist on a traditional sweet potato recipe. Perfect for your holiday dinners.
ingredients:
- 2-3 sweet potatoes, sliced into 1/8” rounds
- 2 tablespoons olive oil
- 3 tablespoons butter, melted
- 2 teaspoon minced garlic
- 2 tablespoon finely chopped fresh rosemary
- 1/2 teaspoon black pepper
- 1 teaspoon salt

How to cook Sweet Potato Stacks
- Preheat oven to 375 degrees. Grease muffin tin. Clean and dry potatoes.
- Using a sharp knife or a mandolin slicer, slice potatoes into 1/8” thick rounds.
- Add potatoes and olive oil into a large bowl and toss.
- Add the butter, garlic, rosemary, salt and pepper to the bowl and toss until all pieces are nicely covered.
- Place piles of 8-10 slices in the muffin tin placing the larger rounds near the bottom.
- Place a toothpick in the center of every stack and brush on remaining butter mixture.
- Bake for 50-55 minutes until edges are slightly brown and crispy.
- Use a fork and toothpick to remove the stacks. Serve Immediately.
NOTES:
*To reheat: Put stacks on a baking sheet and turn oven on broil. Bake in oven for 5 minutes.
