Sheet Pan Lemon Garlic Shrimp and Asparagus

1. Preheat oven to 400 degrees and line a baking sheet with parchment paper or spray with cooking spray.

2. In a medium bowl, whisk together olive oil, melted butter, white wine, lemon juice, lemon zest, garlic, and seasonings.

3. Add shrimp to a large bowl and pour the marinade over the top.

4. Stir together until all shrimp are coated.

5. Cover and place in refrigerator to marinate for at least 30 minutes.

6. While shrimp is marinating, toss the asparagus with olive oil.

7. Add the salt, pepper and lemon zest.  Toss together.

8. Lay on one half of the baking sheet in a single layer.

9. Bake for 7-8 minutes.

10. Remove from oven and lay the marinated shrimp in a single layer on the other side of the baking sheet.

11. Place everything back in the oven and cook for an additional 8-12 minutes, until shrimp are pink in color.  This will vary depending on the size of your shrimp.

12. Remove from oven and sprinkle with fresh parsley.
