You can substitute kielbasa sausage for the chicken sausage if desired.
Substitute homemade Cajun seasoning for store bought seasoning if desired.

1. Pre-heat oven to 400 degrees and prepare a large baking sheet with parchment paper. Spray the pan lightly with cooking spray.
2. In a small bowl, combine onion powder, garlic powder, oregano, basil, thyme, black pepper, white pepper, cayenne pepper, paprika and salt. Set aside.
3. In a large bowl, add the sausage and the cut vegetables.
4. Add the olive oil and the Cajun seasoning and stir until everything is coated nicely.
5. Transfer to baking sheet and roast around 30 minutes stirring occasionally.
