Skillet Gingerbread Cookie

Fun, festive and easy! This spicy cookie is the perfect addition to any holiday dessert table!

Ingredients

Cookie
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon white pepper
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup sugar, plus 1 tablespoon for sprinkling on top
  • 1/2 cup molasses, unsulfured
  • 1 large egg
  • 1/2 teaspoon vanilla
Glaze
  • 1 cup powdered sugar
  • 3 teaspoons milk

Instructions

  1. Preheat oven to 375 degrees and grease a 10-12” cast iron skillet with butter.
  2. In a medium bowl, whisk the flour, ginger, cinnamon, nutmeg, cloves, white pepper, baking soda and salt together. Set aside.
  3. In a large bowl or the bowl of a stand mixer, add the butter and beat until creamy.
  4. Add sugar and beat until well combined.
  5. Add the molasses, egg and vanilla. Beat until light and fluffy.
  6. Add the flour mixture and mix until just combined.
  7. Spread the dough evenly into the greased skillet. Sprinkle extra sugar on the top.
  8. Bake for 20-25 minutes until browned nicely on the edges.
  9. Remove from oven and let cool completely on wire rack.
  10. Make the glaze. In a medium bowl add the powdered sugar and 1 teaspoon of milk.
  11. Whisk together until desired consistency is met. Glaze should be the consistency of toothpaste. Add extra milk if glaze is too thick.
  12. Pipe or drizzle glaze on cookie. Let glaze harden before serving or cutting.
