Sweet and sour lemon cookies are the perfect Summer treat! Pucker up!
Ingredients:
- 1 cup butter, softened
- 1 1/2 cups sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1/4 cup lemon juice
- 1 tablespoons lemon zest
- 2 tablespoon honey
- yellow food coloring *optional
- 4 cups flour
- 2 teaspoons cornstarch
- 1/2 teaspoon salt
- 2 teaspoons baking soda
Topping
- 2 tablespoons sugar
- 1 teaspoon sour salt
Instructions:
- Cream butter in a large bowl or stand mixer.
- Slowly add sugar and mix over medium-low speed until incorporated.
- Add eggs and brown sugar and mix on medium speed for 2 minutes.
- Add lemon juice and combine.
- Add honey and lemon zest and mix for another minute.
- Add 2 drops of liquid yellow food coloring to enhance yellow color. *optional
- In a separate bowl combine the flour, baking soda, cornstarch and salt.
- On low speed, add the dry mixture to the wet mixture one spoonful at a time scraping down the sides of the bowl when necessary.
- Cover with plastic wrap and refrigerate for at least 3 hours.
- Pre-heat oven to 350 degrees, line a baking sheet with parchment paper.
- Roll dough in to golf ball size balls and roll in sour salt/sugar mixture.
- Bake cookies for about 10 minutes. Don’t over bake.
- Remove cookies and let cool on baking sheet.
