Directions

1. Prepare the topping.  In medium bowl, combine flour, brown sugar, sugar, and cinnamon.  

2. Add the melted butter and mix with a fork until pea like crumbles begin to form.  Set aside.

3. Pre-heat oven to 350 degrees and line a 12-count muffin tin with paper cups.

4. In a medium bowl whisk together the flour, corn starch, cinnamon, baking powder, baking soda and salt.  Set aside.

5. In a large bowl, add the butter, oil, and sugars.  Whisk together until combined.

 

6. Add the eggs, buttermilk, and vanilla. Mix until well combined.

7. Pour the dry ingredients into the wet ingredients and mix until just combined.

8. Fill the muffin cups 3/4 full.  Using a 1/4 cup measuring cup works well for this.

9. Evenly spoon the streusel on top of the batter and press down gently with you hands. 

10. Bake for 23-25 minutes until a toothpick inserted into the center comes out mostly clean. 

 

 

11. Remove from oven and let cool in tin for 5 minutes before releasing.  Let finish cooling on a wire rack.
