This banana bread is great warm or cold. We prefer to cut our into slices and keep in the refrigerator!
Any nut milk will work in this recipe. We like the flavor of oat milk best.
*Using honey will make the banana bread not 100% vegan, but it is a suitable alternative to maple syrup if desired!

1. Preheat your oven to 350 degrees and line a standard loaf pan with parchment paper or grease with coconut oil.
2. In a large bowl, whisk together the flour, oats, sunflower seeds, pepitas, chia seeds, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. Add the chopped dates and stir until coated with the flour mixture.
4. In a medium bowl, add the mashed bananas, oat milk, sunflower butter, coconut oil, maple syrup, and vanilla.
5. Mix with a fork until well mixed. A few banana chunks are fine.
6. Pour the banana mixture into the flour mixture.
7. Stir with a wooden spoon or spatula until just combined.
8. Pour the batter into the prepared loaf pan.
9. Top with extra sunflower seeds until covered.
10. Bake for 45-50 minutes until a toothpick comes out of the center clean.
11. Remove from oven and let cool completely in pan before cutting into pieces.
