White Chocolate Soufflés

ingredients:
- 2 tablespoons butter, softened
- 3 egg yolks, room temperature
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 6 ounces white chocolate chips
- 6 egg whites, room temperature
- 1/4 teaspoon cream of tartar
- 1/3 cup sugar
- 4 drops red food coloring
- Powdered sugar for dusting

How to cook White Chocolate Soufflé
- Preheat oven to 350 degrees and heavily grease 4 12-oz ramekins with butter.
- Add egg yolks, vanilla and salt to a large bowl and whisk until combined.
- Add white chocolate chips to a microwave safe bowl. Heat white chocolate in the microwave on half power. Start with 1 minute and stir. Then heat on half power in 15 second intervals stirring in between until chocolate is smooth and completely melted.
- Add chocolate to egg yolks and whisk until combined. Set aside.
- Add egg whites to a large bowl with an electric mixer or in a stand mixer. Whisk egg whites on medium speed until bubbles start to form.
- Add cream of tartar and continue whisking until foamy and soft peaks start to form.
- Increase mixing speed to medium-high. While mixer is running, slowly add sugar, one tablespoon at a time.
- Once all sugar is added continue to mix until meringue is thick and glossy.
- Add 1/4 of the meringue to the egg/chocolate mixture and whisk together until combined.
- Gently fold the remaining meringue until incorporated. Do not overmix!
- To add color for Valentine’s Day, divide the soufflé batter into 2 bowls.
- Add 4 drops of red food coloring into one of the bowls and gently fold until color is reached. Do not overmix!
- Fill each ramekin with equal amounts of batter about 3/4 of the way to the top. Alternate between pink and white.
- Drag a toothpick or a cake tester through the batter to create a swirl effect.
- Place ramekins on a baking sheet equally apart.
- Bake for 15-17 minutes until soufflés are puffy and lightly browned.
- Remove from oven, sprinkle powdered sugar and red sugar. Serve immediately!
NOTES:
Soufflés will inevitably fall after a few minutes. Serve as soon as possible for the best presentation!
Make these soufflés without food coloring for any occasion.
